Chicken casserole recipe

Make ahead chicken casserole for a hassle-free dinner - simply bake when ready.
Ingredients:
  • 6 Free Range Chicken Thigh Fillets
  • 2 shallots, diced
  • 4 garlic cloves, finely chopped
  • 2 roma tomatoes, diced
  • 1 carrot, diced
  • 3 sprigs of thyme
  • 2 bay leaves
  • 1 litre chicken stock
  • quartered button mushrooms
  • handful broad beans, blanched
  • handful fresh peas
  • 6 asparagus spears
  • chopped parsley
  • 2 knobs butter chilled
Instructions:
  • Warm up the olive oil in a casserole dish.
  • Sear the chicken on all sides until golden brown, then remove and set aside.
  • Sauté the shallots, garlic, carrot, and mushrooms in the casserole for 4 to 5 minutes.
  • Simmer diced tomatoes for 4 more minutes on medium-low heat until vegetables are beautifully colored.
  • Add the chicken thighs, herbs, salt, and pepper into the pot. Pour in the stock and bring it to a boil. Reduce the heat and simmer until the chicken is cooked through, about 20 minutes.
  • Add the spring vegetables - peas, broad beans, and asparagus, and cook for a few minutes.
  • Right before serving, add butter to thicken and create a smooth texture. Serve this dish with a creamy mash for a fantastic combination!
