Indulge in a flavorful homemade Indian chicken curry, made with caramelized onions, aromatic spices, garlic, tomatoes, and chilies for a tantalizing dining experience.
Ingredients:
  • 2 tablespoons vegetable oil
  • 3 medium onions, finely chopped
  • 1 1/2 teaspoon salt, divided
  • 4 cloves garlic, crushed
  • 1 tablespoon minced fresh ginger
  • 2 ripe tomatoes, diced
  • 1 teaspoon chilli powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 2 green chillies, halved lengthways (optional)
  • 2 skinless, boneless chicken breast halves, cubed
  • 1 teaspoon mild curry paste (such as Patak’s)
  • fresh coriander leaves, finely chopped
Instructions:
  • Heat oil in a nonstick pan over high heat until shimmering. Add onion and salt, and sauté until onions are softened, approximately 5 minutes.
  • Lower the heat and mix in the garlic and ginger until aromatic. Pour in the hot water, cover, and simmer, stirring occasionally, until the water is absorbed, approximately 5 minutes.
  • Toast chili powder, ground coriander, cumin, and turmeric in a pan over high heat for 5 minutes. Add tomatoes and green chiles, then cover and simmer on low heat for 5 minutes.
  • Sear chicken in high heat until golden brown, about 5 to 7 minutes. Mix in curry paste, then simmer on low heat with lid on until chicken is fully cooked, adding water if needed, for about 5 minutes. Taste and garnish with fresh cilantro before serving.
