Chicken Bombs with Bacon and Jalapenos

Indulge in spicy jalapeno and gooey cheese stuffed chicken bombs wrapped in crispy bacon.
Ingredients:
  • 5 (4 ounce) skinless, boneless chicken breast halves
  • salt and freshly ground black pepper to taste
  • 1.25 cups shredded Monterey Jack cheese
  • 0.5 (8 ounce) package cream cheese
  • 5 jalapeno peppers, halved and seeded
  • 30 slices bacon
  • roasting string
  • 0.5 cup barbecue sauce, or to taste
Instructions:
  • Preheat your gas grill to medium heat (350 degrees F (175 degrees C)) or if using charcoal, arrange briquettes on one side of the barbeque and lightly oil the grate.
  • Cut chicken breasts in half horizontally and place them in a resealable plastic bag. Seal the bag and gently pound the chicken to 1/4-inch thickness. Season with salt and pepper.
  • Combine creamy Monterey Jack cheese and velvety cream cheese in a bowl. Generously stuff each jalapeno half with the cheese blend, using around 1 tablespoon per half.
  • Lay 1 cheese-filled jalapeno, cheese side down, in the center of each chicken breast half. Fold the chicken into a pouch, wrap each breast with 3 bacon strips, and tie securely with roasting string in 4 places.
  • Grill over indirect heat, basting with barbecue sauce and turning every 5 minutes, until juices run clear, about 30 minutes.
