Elevate your meals effortlessly with these versatile ice-cube flavor bombs, available in tomato and feta, green chili, and zesty coconut flavors. Perfect for enhancing roasted vegetables, stir-fries, chicken, or fish dishes.
Ingredients:
  • 30ml-capacity ice cube tray
  • 250g sun-dried tomatoes in oil, drained, plus 60ml (1/4 cup) oil from jar
  • 4 garlic cloves, peeled
  • 125.00 ml, firmly packed fresh basil leaves
  • 100g feta, crumbled
  • 2 x 270g jars pickled jalapeno chillies, drained, plus 2 tbsp pickling liquid
  • 250.00 ml fresh coriander leaves, coarsely chopped
  • 4 green shallots, sliced
  • 2 fresh limes, juiced and rind finely grated
  • 8 green shallots, sliced
  • 80.00 ml grated fresh ginger
  • 40.00 ml lemongrass paste
  • 20.00 ml ground turmeric
  • 125ml (1/2 cup) coconut milk
Instructions:
  • Create the tomato and feta bombs by blending tomatoes, oil, garlic, basil, and feta in a food processor until finely chopped. Distribute the mixture among 14 (30ml-capacity) ice-cube tray compartments. Freeze the mixture, then thaw in the fridge before mixing with roasted vegetables or stirring into beans and legumes.
  • For the green chilli bombs, blend chillies, pickling liquid, coriander, shallot, lime juice, and lime zest in a food processor until finely chopped. Spoon mixture into 14 (30ml capacity) ice-cube tray holes. Freeze, then thaw in the fridge before adding to guacamole or drizzling over grilled fish or chicken.
  • Process shallot, ginger, lemongrass, turmeric, and coconut milk in a food processor until finely chopped. Portion into 14 (30ml capacity) ice-cube tray holes, then freeze. Defrost in the fridge and mix with green vegetables, rice, or noodles before serving.
