Quick French onion chicken pie recipe

Ingredients:
  • 1 sheet frozen puff pastry, just thawed
  • 1 egg, lightly whisked
  • 25g Simply Unsalted Butter
  • 1 brown onion, coarsely chopped
  • 1 carrot, peeled, finely chopped
  • 150g cup mushrooms, quartered
  • 120g (3/4 cup) frozen peas
  • 120g (3/4 cup) frozen corn kernels
  • 20.00 ml plain flour
  • 40g pkt French Onion Soup Mix
  • 300ml ctn thickened cream
  • 185ml (3/4 cup) milk
  • ½ x hot Classic Homestyle Roast Chicken, meat shredded
Instructions:
  • 1. Preheat your oven to 220C/200C fan forced and prepare a large baking tray with baking paper. 2. Cut your pastry into 16 equal squares and arrange them on the tray, overlapping slightly to form a decorative pattern that will cover the top of your pie dish. 3. Brush the pastry with egg wash and bake for 15-20 minutes until beautifully golden and puffed. Enjoy!
  • In a frying pan over medium-high heat, melt the butter. Cook the onion and carrot until onion is soft, about 5 minutes, stirring occasionally. Add the mushroom, peas, and corn. Cook for another 5 minutes, stirring occasionally, until the mushroom starts to soften.
  • Coat vegetables with flour, then mix in soup mix. Add cream and milk, stirring until combined. Mix in chicken and season with freshly ground black pepper. Simmer and stir constantly for 5-10 minutes until thickened and chicken is heated through. Adjust consistency by adding a little extra milk or water if needed.
  • Place the chicken mixture into the pie dish and add a decorative pastry topping before serving.
