Whip up quick and delicious mozzarella-stuffed French onion chicken meatballs for a cozy weeknight dinner.
Ingredients:
  • 1 pound ground chicken
  • 0.75 cup panko bread crumbs
  • 1 (1.4 ounce) package dry French onion soup mix (such as Knorr®), divided
  • 1 pinch ground black pepper
  • 2 ounces mini mozzarella balls
  • 0.75 cup water
  • 1 tablespoon heavy cream
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a rimmed baking sheet by lining it with foil.
  • Mix ground chicken, bread crumbs, 4 tablespoons French onion soup mix, and pepper in a bowl until well combined. Cover and allow the mixture to rest for 10 minutes.
  • Divide the chicken mixture into balls using a 1 1/2-tablespoon scoop. Push a mozzarella ball into each chicken ball and roll to cover the cheese. Arrange the stuffed chicken balls on the baking sheet.
  • Bake meatballs in the preheated oven until they are beautifully golden and fully cooked, approximately 18 minutes.
  • In a saucepan over medium-high heat, warm up the remaining French onion mix along with water and cream until the mixture slightly thickens. Pour this delicious sauce over the stuffed chicken balls before serving.
