Tender chicken breasts simmered in white wine reduction with artichokes, mushrooms, and crispy bacon.
Ingredients:
  • 4 slices bacon, chopped
  • 2 tablespoons butter
  • 4 skinless, boneless chicken breasts, pounded flat
  • 1 cup chopped mushrooms
  • 0.25 cup chopped green onions
  • 1 cup marinated artichoke hearts, drained and chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1.5 cups white wine, or to taste
  • 2 teaspoons white sugar, or to taste
  • 0.33333334326744 cup half-and-half
Instructions:
  • Fry bacon in a large skillet over medium-high heat, flipping occasionally, until crispy and golden brown, approximately 10 minutes. Transfer to a paper towel-lined plate to drain.
  • In a separate skillet over medium heat, heat olive oil and butter until the butter has melted. Add chicken and cook for 4 to 5 minutes per side until browned. Transfer the chicken to a plate.
  • In a skillet, cook mushrooms and green onions until mushrooms are tender, about 6 to 8 minutes. Add artichokes, garlic, and oregano, cook for another minute, then mix in bacon. Pour in wine and sugar, simmer until sauce thickens, approximately 3 to 5 minutes.
  • Return the chicken breasts to the luscious sauce, pour in the half-and-half, and let it all simmer for 1 minute.
