Balsamic mushroom sauce enhances chicken dish.
Ingredients:
  • 4 skinless, boneless chicken breasts
  • salt and pepper to taste
  • 0.75 pound fresh mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 6 cloves garlic
  • 0.25 cup balsamic vinegar
  • 0.75 cup chicken broth
  • 1 bay leaf
  • 0.25 teaspoon dried thyme
  • 1 tablespoon butter
Instructions:
  • Season the chicken generously with salt and pepper. Rinse and dry the mushrooms. Season the flour with salt and pepper, then coat the chicken breasts in the mixture. Heat oil in a skillet over medium-high heat and sear the chicken until golden brown on one side (around 3 minutes).
  • Sprinkle in the garlic, flip the chicken breasts, and generously layer the mushrooms on top. Let them cook together, gently moving the skillet to mix in the mushrooms. After about 3 minutes, pour in the vinegar, broth, bay leaf, and thyme. Seal with a lid and let it simmer on medium low heat for 10 minutes, occasionally flipping the chicken.
  • Place the chicken on a cozy serving platter and cover it with foil. Keep it warm. Let the sauce simmer over medium-high heat, uncovered, for approximately 7 minutes. Add butter or margarine and swirl it in, then remove the bay leaf. Drizzle the mushroom sauce over the chicken before serving.
