Easy Chipotle Chicken with Green Onion Gravy: A delightful twist on a classic dish.
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • salt and fresh ground pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 0.75 cup chicken broth
  • 2 tablespoons minced green onions
  • 0.5 teaspoon chipotle chile powder, or more to taste
Instructions:
  • Place chicken breasts between plastic sheets on a flat surface. Pound with a meat mallet until 1/2-inch thick. Season with salt and pepper.
  • In a skillet over high heat, shimmer olive oil for about 1 minute. Lower heat to medium. Sear chicken breasts until golden and cooked through, about 5 minutes per side. Place cooked chicken on a warm plate, loosely cover with aluminum foil.
  • In a skillet, melt the butter, then add flour and cook for 2 minutes. Pour in chicken broth, scraping up any browned bits; simmer and stir until gravy thickens, about 1-2 minutes.
  • Mix in the vibrant green onions and smoky chipotle chile powder.
  • Place the chicken breasts back in the skillet and heat for 1 to 2 minutes until fully warmed.
