Chicken Breasts with Creamy Mushroom Gravy

Indulge in quick chicken breast dinner with rich gravy in just 30 minutes.
Ingredients:
  • 4 boneless skinless chicken breasts (4 oz each)
  • 1/2 cup Original Bisquick™ mix
  • 1/2 teaspoon garlic powder
  • 1 egg
  • 3 tablespoons vegetable oil
  • 1 1/2 cups sliced fresh mushrooms
  • 3 tablespoons Original Bisquick™ mix
  • 2 medium green onions, sliced (2 tablespoons)
  • 1 cup milk
  • 1 1/2 teaspoons soy sauce
Instructions:
  • Place chicken breasts between sheets of plastic wrap or waxed paper and flatten them to about 1/4 inch thickness using a meat mallet or rolling pin.
  • Combine 1/2 cup Bisquick mix and garlic powder in one dish. Beat an egg in another dish. Dip chicken in egg, then coat with Bisquick mixture.
  • Heat 2 tablespoons of oil in a 12-inch nonstick skillet over medium heat. Add the chicken and cook for about 3 minutes until golden brown. Turn the chicken, cover, and cook for an additional 4 to 6 minutes until no longer pink in the center. Transfer the chicken to a serving platter, cover, and keep warm.
  • In the same skillet, heat the remaining 1 tablespoon of oil over medium heat. Saute mushrooms for 3 to 4 minutes until nicely browned. Add 3 tablespoons of Bisquick mix and onions; stir until combined. Pour in milk and soy sauce, cooking until thick and bubbly. Spoon over chicken to serve.
