Tender, crispy chicken breasts with zesty lime-butter sauce. Easy to prep, but rich in flavor.
Ingredients:
  • 4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
  • 1 egg, beaten
  • 0.66666668653488 cup dry bread crumbs
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 6 tablespoons butter
  • 1 teaspoon minced fresh chives
  • 0.5 teaspoon dried dill weed
Instructions:
  • Dip chicken breasts in beaten egg, then coat with bread crumbs. Place on a wire rack to air dry for 10 minutes.
  • In a large skillet over medium heat, heat olive oil. Add chicken and cook for 3 to 5 minutes per side until golden brown. Transfer to a platter and keep warm.
  • Remove grease from the skillet, then add lime juice and simmer over low heat. Incorporate butter and stir until melted. Season with chives and dill. Drizzle the sauce over the chicken and serve promptly.
