Turn classic coleslaw into a delicious main course by adding juicy chicken breast.
Ingredients:
  • 2 cooked skinless chicken breasts (or 1/2 barbecued chicken, skin removed)
  • 2 celery stalks, cut into thin strips
  • 1 carrot, coarsely grated
  • 6 spring onions, thinly sliced
  • 1/4 red cabbage, finely shredded
  • 1/4 savoy cabbage, finely shredded
  • 235g mayonnaise
  • 40.00 ml rice vinegar
  • 60ml sweet chilli sauce
  • 2 tsp grated ginger
  • 12.00 gm toasted sesame seeds
  • Baby cos lettuce leaves, to serve
Instructions:
  • Combine shredded chicken with a medley of fresh celery, carrot, onion, and cabbage.
  • Mix the mayonnaise, oil, vinegar, chili sauce, and ginger in a separate bowl.
  • Combine the salad with the dressing and sprinkle half of the sesame seeds.
  • In serving bowls, arrange lettuce leaves, top with salad, and generously sprinkle with remaining sesame seeds.
