Elevate your crepe with basil-infused sauteed balsamic chicken, portobello mushrooms, broccoli, and tomatoes.
Ingredients:
  • 1 cup milk
  • 0.5 cup all-purpose flour
  • 2 eggs
  • 1 tablespoon butter, at room temperature
  • 6 leaves fresh basil leaves, minced
  • 1.5 pounds chicken tenderloins, diced
  • 0.25 cup grapeseed oil
  • 1.5 tablespoons balsamic vinegar
  • 1 head broccoli, chopped
  • 1 tablespoon butter
  • 2 Roma tomatoes, chopped
  • 0.5 (8 ounce) package sliced portobello mushrooms
  • 0.75 cup heavy cream
  • 2 tablespoons semi-soft cheese with garlic and herbs (such as Allouette®)
  • 1 tablespoon pesto
Instructions:
  • In a blender, mix milk, flour, and eggs until smooth, for about 1 minute.
  • Preheat a nonstick pan over medium-high heat. Lightly coat the pan with butter. Pour 3 tablespoons of batter into the pan and swirl to cover the surface. Sprinkle with 1 or 2 teaspoons of basil on top.
  • Brown the edges for 2 to 3 minutes, then flip the crepe and cook until set for about 2 minutes. Place on a plate and continue cooking the rest of the batter, brushing the pan with butter and stacking crepes with parchment paper in between.
  • Combine chicken, premium grapeseed oil, aged balsamic vinegar, and a pinch of salt in a zipper-lock bag; let marinate for 20-30 minutes.
  • Discard the marinade. Heat a skillet over medium-high heat. Cook and stir the chicken until its juices run clear, approximately 5 minutes.
  • Add broccoli to a microwave-safe bowl with 2 tablespoons of water, then microwave until crisp-tender, about 3 to 4 minutes.
  • In a skillet over medium heat, melt butter and sauté garlic until fragrant, for about 1 minute. Add broccoli and toss to coat in the flavorful garlic butter mixture. Incorporate tomatoes and mushrooms, and heat everything through.
  • Combine cream, cheese, and pesto in a saucepan over medium heat. Stir continuously until a creamy sauce forms, about 3 to 5 minutes.
  • Place a crepe on a plate, fill the center with chicken, and drizzle sauce over it. Fold the crepe like a burrito and top it with more chicken and sauce. Repeat with the rest of the crepes, filling, and sauce.
