Creamy chicken, mushroom, and cheese crepe packets with savory gravy.
Ingredients:
  • 0.66666668653488 cup all-purpose flour
  • 3 eggs
  • 1 teaspoon butter, or as needed
  • 3 cups sliced fresh mushrooms
  • 4 tablespoons chopped onion
  • 0.5 cup ricotta cheese
  • 2 tablespoons cream cheese
  • 2 cups chopped rotisserie chicken meat
  • 0.5 cup freshly grated Parmesan cheese
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In an electric blender, combine milk, flour, eggs, and salt until smooth. Allow the crepe batter to rest for at least 30 minutes.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and give your 9x13-inch baking pan a quick and light greasing.
  • In a medium-sized skillet over medium heat, melt butter. Pour 2 tablespoons of batter into the skillet and swirl quickly to create a thin layer. Cook until the crepe is no longer wet on top and the bottom is lightly browned, 1 to 2 minutes. Using a spatula, loosen the edges of the crepe, flip, and cook the other side until light brown, about 1 minute. Transfer to a plate and repeat with the remaining batter.
  • In a hot skillet, cook mushrooms and onion until tender for about 5 minutes. Add garlic and cook for another 30 seconds until fragrant. Melt and blend ricotta cheese and cream cheese for 2 to 3 minutes. Lastly, mix in chicken and season with salt and pepper.
  • Place a generous amount of Parmesan cheese in the center of each crepe. Add 1/4 cup of the chicken-mushroom mixture on top. Fold the sides to create a packet and arrange them folded-side-down in the baking pan.
  • Bake until golden and bubbly in the preheated oven for approximately 15 minutes.
  • Melt butter in a saucepan on medium heat. Add flour and cook for 1 minute. Pour in chicken broth and cook until slightly thickened, 5 to 7 minutes. Stir in parsley. Spoon gravy over crepe packets before serving.
