Chicken Diane Style

Sautéed chicken with onions and mushrooms, braised in flavorful herbs, spices, brandy, and broth until tender and delicious. Enjoy the aromatic delight!
Ingredients:
  • 2 small onions, chopped
  • 1 pound fresh mushrooms
  • 8 skinless, boneless chicken breast halves
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon paprika
  • 2 teaspoons chopped fresh chives
  • 2 teaspoons dried parsley
  • 0.5 cup chicken broth
  • 0.25 cup brandy
  • 2 tablespoons prepared Dijon-style mustard
Instructions:
  • In a large skillet over medium heat, saute onions and mushrooms until caramelized. Remove and set aside. In the same skillet, cook chicken breasts for 4 minutes on each side. Top with the reserved mushroom and onion mixture.
  • Combine salt, pepper, paprika, chives, and parsley in a small bowl, then sprinkle the mixture over the chicken. In a separate medium bowl, mix the broth, brandy, and mustard until well blended. Pour over the chicken, reduce heat to low, and simmer for 20 to 25 minutes until chicken is fully cooked (no longer pink inside).
