Try this wholesome creamy chicken Diane for a delicious family meal tonight.
Ingredients:
  • 400g cauliflower, cut into small florets
  • 400g peeled potatoes, chopped
  • 20.60 gm reduced-fat milk
  • 2 bunches broccolini
  • 2 chicken breast fillets, halved lengthways
  • 1 brown onion, thinly sliced
  • 3 garlic cloves, crushed
  • 60ml (1/4 cup) brandy (optional)
  • 185ml (3/4 cup) Chicken Style Liquid Stock
  • 60ml (1/4 cup) light thickened cream
  • 12.20 gm Worcestershire sauce
  • 11.80 gm Dijon mustard
Instructions:
  • Combine cauliflower and potato in a large saucepan and cover with cold water. Bring to a boil over medium-high heat and simmer for 15 minutes until the potato is tender. Drain and mash until smooth using a potato masher. Stir in milk, season to taste, and cover to keep warm.
  • Preheat your oven to 200C/180C fan forced. Line a baking tray with parchment paper, then arrange the broccolini on top. Give them a drizzle of oil and a sprinkle of seasoning. Bake for about 15 minutes until the broccolini is tender and delicious.
  • Heat half of the oil in a large frying pan over high heat. Sear the chicken pieces for 2 minutes on each side until they turn golden brown. Remove and place them on a plate.
  • In the same pan, heat the rest of the oil over medium-high heat. Sauté the onion for 5 minutes until soft. Stir in the garlic and cook for 1 minute until fragrant. Pour in the brandy (optional) and allow it to come to a boil. Add the stock, cream, Worcestershire sauce, and Dijon mustard. Bring to a boil.
  • Place the chicken back in the pan and let it simmer for 5 minutes until the sauce thickens and the chicken is fully cooked. Serve the chicken Diane over cauliflower mash with broccolini, topped with the delicious sauce.
