Delicious roast chicken and potatoes with savory tomato gravy.
Ingredients:
  • 12 chicken drumsticks
  • 4 large potatoes, peeled, cut into quarters
  • 127.50 gm vegetable liquid stock
  • 22.20 gm tomato paste
  • 3 tsp dried rosemary
  • 2.50 gm ground paprika
  • 1.20 gm sea salt flakes
  • 1/2 tsp ground black pepper
  • 56.88 gm olive oil
  • steamed vegetables, to serve
Instructions:
  • Preheat your oven to 220°C. Arrange the drumsticks and potatoes evenly in a large roasting pan. In a small saucepan over medium-low heat, mix the stock and tomato paste until well combined. Stir and cook for 2 minutes. Let it cool slightly.
  • Mix rosemary, paprika, salt, and pepper in a bowl, then season chicken and potatoes. Sprinkle garlic over the chicken and potatoes, but do not pour stock mixture over them. Drizzle oil on top. Bake for 1 to 1 hour 15 minutes until golden and fully cooked. Serve alongside steamed vegetables.
