Delicious chicken egg foo young with veggies and leftover chicken for a quick breakfast.
Ingredients:
  • 4 large eggs
  • 4 ounces cooked, shredded chicken breast
  • 0.5 cup chopped onion, or more to taste
  • 0.5 cup chopped broccoli
  • 1 tablespoon coconut aminos
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons avocado oil, divided
  • 1 stalk green onion, thinly sliced (green part only)
Instructions:
  • Combine eggs, cooked chicken, onion, broccoli, coconut aminos, garlic powder, salt, and pepper in a mixing bowl.
  • Start by warming a saute pan with a tablespoon of oil over gentle heat. Pour in a third of the egg mixture and let it cook for 2 to 3 minutes. Gently flip and cook for another 2 to 3 minutes. Repeat this process twice more to prepare the additional two servings, adding more oil if required.
  • Sprinkle servings with freshly chopped green onions for a burst of color and flavor.
