Quick and easy chicken egg drop soup with ginger and chives for a delicious Chinese-inspired starter.
Ingredients:
  • 4 cups chicken broth, divided
  • 2 tablespoons chopped fresh chives
  • 0.125 teaspoon ground ginger
  • 1.5 tablespoons cornstarch
Instructions:
  • Assemble all your ingredients.
  • Set aside 3/4 cup of chicken broth. Pour the remaining broth into a large saucepan and mix in chives, salt, and ginger. Bring to a rolling boil. Stir together the reserved 3/4 cup of broth and cornstarch until smooth.
  • Beat eggs and egg yolk in a small bowl, then slowly drizzle into boiling broth, allowing them to cook instantly.
  • Gradually add the cornstarch mixture while stirring until the soup reaches your preferred thickness.
