Elegant restaurant-style dessert made easily at home.
Ingredients:
  • 250g (1 punnet) strawberries, hulled, halved
  • 150g (1 punnet) blueberries
  • 50.00 ml marsala
  • 2 egg yolks, at room temperature
  • 40.00 gm caster sugar
  • Icing sugar, to dust
Instructions:
  • Heat the grill to medium. Arrange the strawberries and blueberries in a shallow heatproof dish. Drizzle 2 teaspoons of Marsala over the berries and let them sit.
  • In a large heatproof bowl, whisk together the egg yolks, sugar, and remaining marsala. Set the bowl over a saucepan of simmering water, ensuring the water does not touch the bowl. Whisk continuously until the mixture is thick, pale, and forms a ribbon trail when the whisk is lifted.
  • Evenly drizzle zabaglione over the berries. Broil for 30-60 seconds or until golden. Sprinkle with icing sugar before serving hot.
