Transform classic chicken enchiladas into a crowd-pleasing Chicken Enchilada Dip with just 5 ingredients in 30 minutes. Perfect for game days and potlucks, this cheesy dip paired with crunchy tortilla chips is a party hit.
Ingredients:
  • 2 cups shredded cooked chicken breast
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 cup shredded Monterey Jack cheese (4 oz)
  • 1 cup shredded Cheddar cheese (4 oz)
  • Tortilla chips
Instructions:
  • Preheat your oven to 350°F and generously grease a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Combine shredded chicken, enchilada sauce, chiles, 1/2 cup Monterey Jack cheese, and 1/2 cup Cheddar cheese in a large bowl. Transfer mixture to a baking dish and sprinkle with remaining cheeses.
  • Bake for approximately 20 minutes until bubbly along the edges, then allow to cool for 5 minutes before serving alongside tortilla chips.
