Overnight marinated chicken fajita tacos - plan ahead for flavorful dinner in under 30 minutes.
Ingredients:
  • 1/4 cup orange juice
  • 2 Tablespoons Mild Taco Seasoning
  • 2 Tablespoons vegetable oil
  • 1 pound boneless skinless chicken breasts, cut into strips
  • 1/2 onion, cut into strips
  • 1/2 green bell pepper, seeded and cut into strips
  • 1/2 red bell pepper, seeded and cut into strips
  • 8 (6 inch) fajita size flour tortillas
  • 1 avocado, pitted and sliced, or as needed
  • ½ cup sour cream, or as needed
  • ½ cup crumbled cotija cheese, or as needed
Instructions:
  • In a large resealable bag, mix orange juice, taco seasoning, and vegetable oil. Add chicken, coat well, remove excess air, and seal the bag. Refrigerate and marinate overnight.
  • Preheat a cast iron skillet over medium-high heat.
  • Sear chicken in a hot skillet for 5 minutes. Then, add onion, green bell pepper, and red bell pepper, and sauté until peppers are crisp-tender, about 4 to 5 minutes. Ensure the chicken reaches an internal temperature of 165 degrees F (74 degrees C) using an instant-read thermometer.
  • Warm tortillas until they are soft and flexible. Top them with the flavorful chicken fajita mixture, creamy avocado, tangy sour cream, and crumbled cotija cheese. Enjoy right away.
