Try this delicious and easy chicken fajitas recipe for a perfect dinner for two.
Ingredients:
  • 2.50 gm ground cumin
  • 1.25 gm smoked paprika
  • Pinch chilli powder
  • 1 small garlic clove, crushed
  • 1 lime, rind finely grated and juiced
  • 1 chicken breast fillet, cut into thin strips
  • 18.20 gm olive oil
  • 1/2 red onion, thinly sliced
  • 1/2 red capsicum, sliced
  • 250ml chicken style liquid stock
  • 2 flour tortillas
  • 1 small tomato, finely chopped
  • 30.00 ml chopped coriander
  • 1/2 avocado, mashed
  • 1/8 green cabbage, finely shredded
  • Thick yoghurt, to serve
Instructions:
  • In a large resealable bag, mix cumin, paprika, chili powder, garlic, and lime zest. Add chicken strips, seal the bag, and shake well to coat the chicken evenly.
  • In a large non-stick frying pan, heat half of the oil until shimmering. Cook the chicken strips for 1-2 minutes on each side, or until they are golden and fully cooked. Set aside once done.
  • Drizzle in the remaining oil, then sauté the onion for 1 minute. Add the capsicum and continue to cook for another 1-2 minutes until just softened. Remove everything from the pan and set aside with the chicken.
  • Pour the flavorful stock into the pan, stir to deglaze, and simmer for 10 minutes until reduced to a delicious 3 tablespoons. Add the chicken back to the pan, coat, mix in the onion and capsicum, and take off the heat. Enjoy!
  • Begin by placing a tortilla on each serving plate. Next, mix the tomato and coriander in a small bowl and season with salt and pepper. In another bowl, combine lime juice with mashed avocado and season it. Now, arrange some cabbage on each tortilla. Top them with chicken and capsicum mixture, tomato salsa, avocado, and a dollop of yogurt. Finally, if desired, sprinkle with extra coriander leaves before serving.
