Chicken Fettuccine Primavera

Italian-inspired dinner in just 25 minutes using Chicken Helper® and frozen veggies for quick and tasty prep.
Ingredients:
  • 1 lb boneless skinless chicken breasts
  • 2 tablespoons margarine or butter
  • 2 1/2 cups milk
  • 1 1/2 cups hot water
  • 1 box Chicken Helper™ fettuccine Alfredo
  • 2 cups Frozen Broccoli Cuts
  • 1 cup frozen sweet peas
  • 1/2 cup julienne-cut carrots (from 10-oz bag)
  • Shredded fresh Parmesan cheese, if desired
  • Fresh basil leaves, if desired
Instructions:
  • Dice the chicken into bite-sized 1/2-inch pieces. In a large skillet, melt margarine over medium-high heat. Add the chicken and cook for about 3 minutes, stirring occasionally, until the outsides are no longer pink.
  • Combine milk, hot water, sauce mix, and uncooked pasta from the Chicken Helper box in a pot. Bring to a boil while stirring occasionally.
  • Lower the heat, then cover and simmer for 6 minutes, stirring occasionally.
  • Add the frozen broccoli, frozen peas, and carrots to the pot. Bring to a boil again. Lower the heat, cover, and let it simmer for 4 to 6 minutes until the pasta and vegetables are tender. Take it off the heat and uncover (the sauce will thicken naturally). Finish by sprinkling Parmesan cheese on top and garnishing with fresh basil leaves.
