Impress with decadent Gorgonzola chicken topped with savory cheese sauce and fresh basil pesto.
Ingredients:
  • 1 cup fresh basil leaves
  • 2.5 tablespoons extra-virgin olive oil
  • 2.5 tablespoons chopped walnuts
  • 2.5 tablespoons grated Parmesan cheese
  • 3 cloves garlic, peeled
  • 4 boneless, skinless chicken breasts
  • 1 cup sliced baby bella mushrooms
  • 0.5 cup thinly sliced onion
  • 0.5 cup Gorgonzola cheese, divided
  • 0.25 cup white wine
  • 0.5 lemon, juiced
  • 2 tablespoons chicken broth
  • 1 teaspoon brown sugar
  • 2 tomatoes, seeded and chopped
Instructions:
  • Prepare the flavorful pesto by blending fresh basil leaves, 2 1/2 tablespoons of olive oil, walnuts, Parmesan cheese, and garlic in a food processor until a smooth paste forms.
  • Heat up a tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken until it turns a beautiful golden brown, around 5 minutes on each side. Then, move the chicken to a serving platter.
  • In the same skillet, sauté mushrooms until tender in a single layer for about 5 minutes. Add onion and cook until translucent for another 5 minutes. Stir in garlic and cook until fragrant for about 30 seconds. Add half of the Gorgonzola cheese and cook until slightly melted. Deglaze the skillet by pouring in wine and scraping up brown bits. Finally, stir in lemon juice, chicken broth, brown sugar, salt, and black pepper.
  • Bring the chicken broth mixture to a vigorous boil, then lower the heat to a gentle simmer until the sauce thickens by a quarter, approximately 3 to 5 minutes. Mix in the pesto and add the chicken back into the skillet. Continue cooking until the internal temperature reaches at least 165 degrees F (74 degrees C), for about 5 more minutes. Introduce the rest of the Gorgonzola cheese and diced tomatoes into the mix.
  • Plate each succulent chicken breast and generously ladle the flavorful sauce over the top for an elegant presentation.
