Gorgonzola chicken with apple and celery salad

Make delicious gorgonzola chicken salad with crisp apples and celery for a simple and tasty meal.
Ingredients:
  • 80g gorgonzola cheese, crumbled
  • 82.50 ml pecan pieces
  • 4 (200g each) chicken breast fillets
  • 1 baby cos lettuce heart, trimmed, torn
  • 2 pink lady apples, halved cored, cut into thin wedges (see note)
  • 1 celery stalk, thinly sliced
  • 61.88 gm whole egg mayonnaise
  • 42.00 gm lemon juice
Instructions:
  • With the back of a spoon, blend together the cheese and half of the pecans in a bowl.
  • Make a small incision in each chicken fillet using a sharp knife to create a pocket. Fill the pockets with the cheese mixture and fasten with toothpicks. Season generously with salt and pepper.
  • In a large frying pan over medium heat, heat oil. Add chicken and cook for 6 minutes on each side, or until fully cooked. Transfer to a plate, cover, and set aside for 5 minutes.
  • In a bowl, mix together lettuce, apple, celery, and the rest of the pecans.
  • Combine mayonnaise and fresh lemon juice in a small jug, season with a pinch of salt and pepper, then drizzle the dressing over the salad and gently toss everything together.
  • Remove toothpicks and discard. Slice chicken thickly, then serve on top of salad.
