Savory Chinese stir-fried chicken in bold black bean and garlic sauce.
Ingredients:
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon soy sauce
  • 1.5 teaspoons white sugar
  • 1 teaspoon salt
  • 6 skinless, boneless chicken breast halves, sliced
  • 1 cup bean sprouts
  • 1/4 cup water
  • 2 teaspoons oyster sauce
  • 1 teaspoon white sugar
  • 3 tablespoons black bean sauce with garlic
  • 1 tablespoon chopped garlic
  • 1 onion, finely sliced
  • 0.5 bell pepper, chopped
  • 2 teaspoons cornstarch
Instructions:
  • Prepare the marinade by combining 1 tablespoon cornstarch and 1 tablespoon water in a bowl. Mix in light soy sauce, sugar, and salt. Add chicken, toss well, and let it marinate for 20 minutes.
  • Boil water in a saucepan. Quickly blanch bean sprouts for 30 seconds, then drain and set aside.
  • Mix 1/4 cup water, oyster sauce, and sugar in a small bowl; let it sit.
  • In a hot skillet, sizzle vegetable oil, black bean sauce, and chopped garlic until aromatic, around 1 minute. Add onion and sauté until tender, 3 to 4 minutes.
  • Add the marinated chicken and stir-fry until fully cooked, around 4 to 5 minutes. Mix in the oyster sauce and cook until heated through. Simmer covered for 1 to 2 minutes to blend flavors. Add bell peppers, cover, and cook until softened, about 1 to 2 minutes.
  • Combine 2 teaspoons cornstarch with 1 tablespoon water until smooth. Add bean sprouts and cornstarch mixture to the pan and simmer until the sauce thickens, around 2 to 3 minutes.
