Chicken in Brandy Cream Sauce

Indulgent brandy sauce enhances this quick and delicious skillet chicken dish. Ready in just 35 minutes!
Ingredients:
  • 1 tablespoon olive or vegetable oil
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1 package (8 oz) sliced fresh mushrooms (3 cups)
  • 4 medium green onions, chopped (1/4 cup)
  • 1/4 teaspoon salt
  • 1/4 cup brandy or chicken broth
  • 1/2 cup whipping (heavy) cream
  • Hot cooked spinach fettuccine or regular fettuccine, if desired
Instructions:
  • Heat oil in a skillet over medium-high heat. Cook chicken for 10 to 15 minutes, flipping once, until the center of the thickest part is clear when cut (170°F).
  • Sauté mushrooms and onions in brandy with salt until mushrooms are tender and liquid is reduced, about 4 to 5 minutes.
  • Slowly incorporate the whipping cream and cook for approximately 2 minutes until heated through. Drizzle over fettuccine before serving.
