Spicy peanut sauce enhances juicy chicken breasts for a flavorful weeknight dish.
Ingredients:
  • 125g roasted unsalted peanuts
  • 2 onions, roughly chopped
  • 3 garlic cloves
  • 60ml kecap manis
  • 8.00 gm brown sugar
  • 10.40 gm chilli sauce (not sweet chilli)
  • 300ml coconut milk
  • 36.80 gm vegetable oil
  • 4 chicken breasts on the bone, cut into 3 pieces with a cleaver or sharp knife
  • 275ml chicken style liquid stock
  • 1 long red chilli, seeds removed, very thinly sliced, to garnish
  • 2 makrut lime leaves, finely shredded, to garnish
  • Steamed jasmine rice, to serve
Instructions:
  • Preheat your oven to 170°C. Use your food processor to quickly blitz together nuts, onion, and garlic until roughly chopped. Mix in ketjap, sugar, chilli sauce, and 1 tablespoon of coconut milk. Set the flavorful mixture aside.
  • In a large frypan over medium heat, sear the chicken in oil until golden brown all over. Transfer to a baking tray and place in the oven to keep warm while you prepare the sauce.
  • Remove excess fat from the pan, then introduce the peanut paste and cook for 1-2 minutes until it becomes aromatic.
  • Pour in the stock and the rest of the coconut milk into the pan, bring it to a boil, then let it simmer for 5 minutes. Add the chicken back to the pan and cook for an additional 5 minutes. Sprinkle with chili and makrut lime leaves before serving with rice.
