Spicy chicken with Muir Glen® tomato and peanut butter sauce, ready in just 25 minutes.
Ingredients:
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes
  • 1/4 cup creamy peanut butter
  • 1/4 cup loosely packed fresh cilantro leaves
  • 3 cloves garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon cinnamon
  • 1 lb uncooked chicken breast tenders (not breaded), cut in half
  • 1 tablespoon olive oil
Instructions:
  • Separate the tomatoes from their juice, keeping the juice aside. In a food processor with the metal blade, combine the reserved tomato juice, peanut butter, cilantro leaves, garlic, salt, and pepper flakes. Blend until smooth using quick pulses.
  • Combine the aromatic cumin and cinnamon in a medium bowl. Toss in the chicken until evenly coated in the flavorful spices.
  • Heat oil in a 12-inch nonstick skillet over medium-high heat. Cook chicken for 5 minutes, turning occasionally, until light golden brown. Stir in tomatoes and peanut butter mixture. Bring to a boil, then simmer uncovered on low heat for 5 minutes to blend flavors.
