Chicken tenders in peanut sauce

Try these zesty chicken tenders with spicy peanut sauce for a bold dinner option.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 600g chicken tenderloins, halved crossways
  • 1 green capsicum, deseeded, chopped
  • 1 red capsicum, deseeded, chopped
  • 3 garlic cloves, sliced
  • 2 tsp finely shredded ginger
  • 5.00 gm curry powder
  • 1/2 tsp dried chilli flakes (optional)
  • 70g (1/4 cup) tomato paste
  • 375ml (1 1/2 cups) chicken style liquid stock
  • 70g (1/4 cup) smooth peanut butter
  • 2 tsp fresh thyme leaves
  • 165ml can coconut milk
  • Fresh coriander sprigs, to serve
Instructions:
  • In a large saucepan over high heat, heat half of the oil. Sear half of the chicken for 4 minutes, turning halfway, until golden brown. Transfer to a plate and repeat with the remaining chicken.
  • Heat the remaining oil in the saucepan over medium heat. Add capsicum and cook for 7 minutes until softened. Stir in garlic, ginger, curry powder, and chili (if desired) and cook for 1 minute until aromatic. Mix in tomato paste and cook for 1 minute. Add stock, peanut butter, and thyme. Bring to a boil, then simmer on low for 10 minutes until slightly thickened. Season to taste.
  • Place the chicken back into the saucepan and cook for 3-5 minutes or until the chicken is perfectly cooked. Serve on individual plates, drizzle with coconut milk, and sprinkle with fresh coriander.
