Cheesy chicken Kyiv bites: Irresistible bite-size balls made with chicken mince and crispy breadcrumbs.
Ingredients:
  • 100g (1 cup) finely grated colby cheese
  • 3 garlic cloves, crushed
  • 40.00 ml finely chopped fresh continental parsley, plus extra leaves, to serve
  • 500g chicken mince
  • 100g (2 cups) panko breadcrumbs
  • 75g (1/2 cup) plain flour
  • 2 eggs
  • Vegetable oil, to deep-fry
  • Fresh tomato, chopped, to serve
  • Red onion, finely chopped, to serve
Instructions:
  • Gently mix the cheese, garlic, and parsley in a bowl using your fingertips.
  • In a separate bowl, combine the chicken mince and 1/2 cup breadcrumbs. Season generously and mix thoroughly using your hands. Shape the mixture into small balls using level tablespoons.
  • Create an indentation in the center of each ball, then slightly flatten. Fill each indentation with a generous pinch (about a firmly packed teaspoon) of the cheese mixture. Fold the chicken around the filling to enclose and reshape into a ball. Repeat with the rest of the chicken and cheese mixture.
  • *Prepare an assembly line of shallow bowls: one with flour, one with lightly whisked eggs, and one with the remaining 1 1/2 cups breadcrumbs. *Coat all the balls in flour, shaking off excess. *Proceed to dip and coat each ball in egg with one hand, then roll and coat in breadcrumbs with the other hand. *Place the coated balls onto a tray. *Continue the process with the remaining balls, using up the rest of the eggs and breadcrumbs.
  • Pour oil into a large saucepan until it reaches one-third of the way up the side. Heat over medium heat. Cook the balls in batches, turning often, until crisp and golden, about 5 minutes. Place on a paper towel-lined plate to drain.
  • Mix the chopped tomato and onion in a small bowl, then sprinkle with the extra parsley. Enjoy with the chicken kiev balls.
