Asian-inspired ground chicken lettuce wraps with shredded carrots and peanut dipping sauce.
Ingredients:
  • 1.5 pounds ground chicken
  • 1 red bell pepper, cut into large dice
  • 0.5 cup soy sauce
  • 2 tablespoons rice wine vinegar, or more to taste
  • 1 tablespoon grated fresh ginger
  • 5 dashes hot pepper sauce (such as Tabasco®)
  • 1 teaspoon Asian (toasted) sesame oil
  • 0.5 cup chunky peanut butter
  • 3 tablespoons hot water
  • 3 tablespoons soy sauce
  • 6 large leaves of iceberg lettuce
  • 2 carrots, shredded
  • 1 tablespoon chopped green onion, or to taste
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • In a large skillet, sauté ground chicken until crumbly and cooked through. Drain excess grease. Add red bell pepper and cook until slightly softened.
  • Combine 1/2 cup soy sauce, rice wine vinegar, ginger, 5 dashes hot pepper sauce, and sesame oil in a bowl. Drizzle the mixture over the chicken and cook over low heat, stirring occasionally, until the flavors meld, for about 5 to 10 minutes.
  • Combine peanut butter and hot water in a small bowl, whisk until smooth. Stir in soy sauce and hot pepper sauce. Set aside the dipping sauce.
  • Create cup shapes with lettuce leaves and stuff them with chicken mixture. Garnish the lettuce wraps with shredded carrots, green onion, cilantro, and drizzle with peanut dipping sauce.
