Curried Chicken Lettuce Wraps

Transform leftover chicken into flavorful curry chicken salad, served in refreshing lettuce wraps for the perfect family meal.
Ingredients:
  • 1 tablespoon olive oil, or to taste
  • 2 cups cubed cooked chicken
  • 2 tablespoons lime juice
  • salt to taste
  • 1 medium green apple, diced
  • 0.66666668653488 cup dried cranberries
  • 0.25 cup toasted slivered almonds
  • 2.5 tablespoons thinly sliced green onions
  • 0.66666668653488 cup mayonnaise
  • 0.5 teaspoon curry powder
  • 12 leaves lettuce, or more to taste
Instructions:
  • In a skillet over medium heat, sauté chicken with lime juice and salt until cooked through, about 7 to 10 minutes. Remove from heat when chicken is no longer pink.
  • Combine the apple, cranberries, almonds, and green onions with the chicken.
  • In a large bowl, blend mayonnaise and curry powder. Combine with chicken mixture and stir until coated. Chill in the refrigerator for at least 1 hour to blend flavors, or overnight for richer taste.
  • Serve the chilled chicken salad in lettuce cups for a hand-held delight.
