Nutritious and versatile slow cooker chicken lettuce wraps. Customize to your taste.
Ingredients:
  • 4 chicken breasts, cut into tiny pieces
  • 1 cup diced fresh mushrooms
  • 1 (8 ounce) can diced water chestnuts
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 large red onion, diced
  • 0.5 teaspoon ginger
  • 0.25 cup salted peanuts, or to taste
  • 0.25 cup teriyaki marinade (such as Kikkoman®)
  • 0.25 cup teriyaki sauce (such as Soy Vay®)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 10 leaves Bibb or head lettuce leaves
  • 2 cups cooked brown rice
  • 0.25 cup spicy peanut sauce (such as San-J®
  • 0.25 cup ginger dressing, or more to taste
Instructions:
  • In a slow cooker, mix chicken, mushrooms, water chestnuts, green bell pepper, red bell pepper, onion, ginger, peanuts, teriyaki marinade, teriyaki sauce, olive oil, and honey. Cook on High for 3 to 4 hours until chicken is fully cooked.
  • Arrange the chicken mixture on a bed of crisp lettuce leaves, top with a generous portion of brown rice, and finish with a flavorful drizzle of peanut sauce and ginger dressing.
