Cheesy garlic linguine with chicken, broccoli, and mushrooms.
Ingredients:
  • 1 (8 ounce) package linguine pasta
  • 2 tablespoons butter
  • 3 green onions, chopped
  • 5 cloves garlic, diced
  • 0.5 pound fresh mushrooms, sliced
  • 1 small head broccoli, chopped
  • 1 (14 ounce) can chicken broth
  • 3 skinless, boneless chicken breast halves - cut into bite-size pieces
  • 0.25 cup butter
  • 0.25 cup all-purpose flour
  • 1 cup milk
  • 1 (8 ounce) package Colby-Jack cheese, cubed
  • salt and ground black pepper to taste
Instructions:
  • 1. Fill a large pot with lightly salted water and bring it to a vigorous boil. Add the linguine and cook until al dente, stirring occasionally, for about 11 minutes. Drain the pasta.
  • In a large pot over medium-high heat, melt 2 tablespoons of butter. Add onions, garlic, mushrooms, and broccoli. Cook and stir for 5 minutes. Pour in chicken broth, cover, and simmer until broccoli is tender. Add chicken and cook until no longer pink in the center, about 5 minutes.
  • As the chicken cooks, gently melt the butter in a saucepan over medium-low heat. Whisk in the flour until a light golden-brown paste forms, about 5 minutes. Blend this mixture into the chicken, stirring diligently with a fork. Slowly pour in the milk, stirring continuously until the sauce is smooth. Let it simmer over medium heat for an additional 5 minutes.
  • Add the Colby-Jack cheese and stir until melted over low heat. Mix in the linguine and season with salt and pepper to taste.
