Create a vibrant and tasty chilled macaroni salad with chicken, corn, peas, carrots, lettuce, mayo, and basil.
Ingredients:
  • 2.5 pounds skinless, boneless chicken breast halves
  • 2 cups macaroni
  • 1 (15 ounce) can mixed vegetables, drained
  • 2 cups shredded lettuce
  • 3 cups mayonnaise
  • 0.25 tablespoon dried basil
  • 1 pinch garlic powder
Instructions:
  • In a medium skillet over medium heat, cook chicken until fully cooked and juices run clear. Allow to cool slightly, then shred using two forks. Reserve 4 cups of shredded chicken.
  • Boil elbow macaroni in a pot of salted water until perfectly cooked. Then, drain and rinse with cold water.
  • Combine the cooked chicken, drained vegetables, shredded lettuce, and mayonnaise in a large bowl. Season with basil, pepper, salt, and garlic powder to your preference.
  • Combine the drained elbow macaroni with the chicken mixture, ensuring it's fully coated.
  • Chill in the refrigerator until serving time.
