Succulent chicken in a smoky, chocolatey mole sauce, best mopped up with warm tortillas.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 (3 pound) chicken, cut into pieces
  • 0.5 teaspoon paprika
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon black pepper
  • 0.125 teaspoon cayenne pepper
  • 1 bay leaf
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup chicken broth
  • 2 teaspoons brown sugar
  • 0.25 cup semisweet chocolate chips
  • 0.25 cup raisins
Instructions:
  • In a Dutch oven or large pot over medium-high heat, warm vegetable oil. Brown chicken pieces on all sides until golden, around 10 minutes. Set chicken aside. Lower the heat to medium, add paprika, cloves, cinnamon, black pepper, cayenne pepper, and bay leaf, cooking until fragrant, about 30 seconds. Stir in onion and garlic, cooking until onion is soft and translucent, about 5 minutes.
  • Combine tomatoes, chicken broth, and brown sugar in a pot and bring to a simmer over medium-high heat. Add chocolate chips and stir until melted, then add chicken pieces back to the pot. Reduce heat to medium-low, cover, and simmer for 15 to 20 minutes until chicken is tender and no longer pink at the bone. Mix in raisins and cook for an additional 3 minutes. Serve with a sprinkle of sesame seeds.
