Juicy chicken breasts smothered in creamy mushroom sauce and gooey melted Monterey Jack cheese.
Ingredients:
  • 0.5 cup butter, divided
  • 0.5 cup chopped onion
  • 8 large mushrooms, chopped
  • 1 clove garlic, minced
  • 2 tablespoons all-purpose flour
  • 0.5 cup chicken stock
  • 1 teaspoon celery salt
  • 0.5 teaspoon white pepper
  • 0.5 cup white wine
  • 1.5 cups shredded Monterey Jack cheese
  • 1 cup all-purpose flour
  • 8 skinless, boneless chicken breast halves - pounded thin
Instructions:
  • Preheat your oven to a toasty 300°F (150°C) and lightly grease a medium baking dish.
  • In a medium skillet over medium heat, melt 1/4 cup butter. Add onion, mushrooms, and garlic, and sauté until tender, about 10 minutes. Stir in 2 tablespoons flour, chicken stock, celery salt, white pepper, and white wine. Simmer on low heat, stirring occasionally, until thickened and well combined, about 10 minutes. Fold in 1/2 cup Monterey Jack cheese until melted and incorporated into the sauce.
  • Combine 1 cup of flour with salt and pepper in a shallow bowl. Coat chicken breast halves with the flour mixture. In a large skillet over medium high heat, melt 1/4 cup butter. Brown the chicken on all sides. Transfer the chicken to a baking dish and top with the sauce.
  • Sprinkle the remaining Monterey Jack cheese over the chicken breast halves and bake in the preheated oven for 25 minutes, or until the chicken is cooked through and the juices run clear.
