Chicken nachos

Elevate store-bought nachos with extra flair by adding unique toppings like spiced chorizo, pickled jalapeños, and creamy queso.
Ingredients:
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 600g chicken mince
  • 15.00 gm taco seasoning mix
  • 420g pkt nachos kit
  • 125.00 ml fresh chopped coriander
  • 1 avocado, halved, stone removed, peeled, chopped
  • 130g sour cream
  • 100g corn chips
  • 125g cheddar cheese
  • 130g salsa
  • 3 shallots, finely sliced
  • Extra coriander, to serve
Instructions:
  • In a spacious non-stick frying pan over medium-high heat, heat the oil until shimmering. Cook the onion until golden, about 3-4 minutes. Stir in the garlic and chicken mince, breaking it up as it cooks, for another 2-3 minutes.
  • Sprinkle in the taco seasoning, nacho toppings from the kit, and pour in 1/4 cup (60ml) water. Let it simmer for 3-4 minutes, until it thickens slightly. Finally, mix in the coriander.
  • In a small bowl, mash the avocado with the guacamole seasoning mix using a fork, then mix in the sour cream.
  • Preheat the grill to high heat. Evenly distribute the corn chips among four heatproof dishes. Layer with the chicken mixture and cheddar cheese. Grill for 4-5 minutes until the cheese is melted. Finish by adding salsa, guacamole, shallots, and extra coriander on top before serving.
