Mild and comforting chicken curry for kids, warming and delicious.
Ingredients:
  • 9.20 gm vegetable oil
  • 82.50 ml laksa paste
  • 1020.00 gm chicken style liquid stock
  • 5.30 gm salt-reduced soy sauce
  • 8.00 gm brown sugar
  • 10.60 gm lemon juice
  • 500g chicken breast fillets, thinly sliced
  • 400ml can light coconut milk
  • 250g dried rice-stick (pad Thai) noodles
  • 150g dried vermicelli noodles
  • 100g snow peas, trimmed sliced diagonally
  • 20.00 ml fresh mint leaves (optional)
  • 20.00 ml fresh coriander leaves (optional)
Instructions:
  • Preheat a wok over high heat and add oil, swirling it around to coat the pan evenly. Stir in the laksa paste and cook for 2 minutes until fragrant. Pour in the stock, soy sauce, brown sugar, and lemon juice, bring to a boil, then reduce the heat to medium. Add chicken and cook for about 5 minutes until it's cooked through. Finish by stirring in the coconut milk and heating through for 2 to 3 minutes.
  • In a pot of boiling water, quickly cook rice stick noodles for 3 minutes. Next, add vermicelli and snow peas, cook for another 1 to 2 minutes until noodles are tender. Drain the mixture.
  • Serve the noodle mixture in individual bowls, then add the chicken mixture on top along with mint and coriander, if desired. Enjoy!
