Whip up a quick and delicious satay chicken noodle stir-fry in just 30 minutes!
Ingredients:
  • 18.40 gm vegetable oil
  • 1 red onion, cut into thin wedges
  • 1 large carrot, halved lengthways, thinly sliced
  • 250g cabbage, coarsely chopped
  • 150g green beans, trimmed, cut into thirds
  • 700g Chicken Thigh Fillets, cut into 1cm-thick strips
  • 505g jar Satay Chicken Cooking Sauce
  • 160ml coconut milk
  • 440g Hokkien Wok Ready Noodles
  • Toasted chopped peanuts, to serve
Instructions:
  • In a wok or frying pan, heat half of the oil over high heat. Add onion, carrot, and cabbage, and stir-fry for 3 minutes until vegetables soften. Then, add garlic and beans, and stir-fry for 1 minute until beans are just tender. Transfer the mixture to a heatproof bowl, cover to keep warm.
  • Heat the remaining oil in a hot wok. Stir-fry the chicken until golden and fully cooked, about 5 minutes. Add KanTong Satay Chicken Cooking Sauce and coconut milk, then bring to a simmer.
  • Heat the KanTong Hokkien Wok Ready Noodles as per packet instructions, then serve in bowls. Add satay chicken, stir-fried vegetables, and a sprinkle of peanuts on top.
