Easy chicken noodle stir-fry recipe

Master the art of stir-frying with my Chinese-inspired sauce. This easy chicken noodle stir-fry features tangy-sweet flavors, perfect for picky eaters. Customize with your favorite veggies. Try the marinated chicken drumsticks using the same sauce for a double delicious weeknight meal.
Ingredients:
  • 200g fresh egg noodles
  • 36.80 gm rice bran oil
  • 500g chicken breast fillets, thinly sliced
  • 3 tsp finely grated fresh ginger
  • 2 garlic cloves, finely chopped
  • 1 long red chilli, sliced, plus extra to serve
  • 200g button mushrooms, halved
  • 250.00 ml shredded carrots
  • 100g snow peas, halved diagonally
  • Taste Chinese stir-fry sauce
  • White pepper
Instructions:
  • Bring a large pot of water to a boil. Add the noodles and cook while stirring occasionally to prevent sticking. Drain and rinse with cold water. Set aside.
  • Heat a wok over high heat, then swirl in the oil. Add half of the chicken and cook for 3 minutes until golden. Flip and cook for another 3 minutes. Transfer to a plate using a slotted spoon. Repeat with the rest of the chicken.
  • Stir-fry ginger, garlic, and chili until aromatic, about 1-2 minutes. Add mushrooms, carrot, and snow peas for 1 minute. Pour in 2 tablespoons of water and continue stir-frying until water evaporates and veggies are tender, about 2 minutes.
  • Combine the noodles with the sauce in the wok, ensuring they are well coated, using tongs to mix in the vegetables.
  • Sprinkle with a dash of fragrant white pepper and garnish with extra chili for a little kick, if desired.
