Delicious Thai chicken pad Thai with rice noodles and savory peanut sauce for Thai food lovers.
Ingredients:
  • 1 (8 ounce) package medium-sized dried rice noodles
  • 4 tablespoons soy sauce
  • 4 teaspoons cornstarch
  • 1.5 cups 1/2-inch wide strips of raw chicken breast
  • 0.25 cup white sugar
  • 0.25 cup fish sauce
  • 2 tablespoons tamarind juice
  • 1 tablespoon lime juice
  • 3 tablespoons canola or peanut oil, divided
  • 0.75 teaspoon minced garlic
  • 0.75 tablespoon white sugar
  • 0.75 teaspoon salt
  • 0.75 cup chopped unsalted dry-roasted peanuts
  • 0.5 teaspoon chili powder
  • 0.25 cup chopped fresh chives
  • 1 cup fresh bean sprouts
Instructions:
  • Soak noodles in a large bowl of cold water until soft, for 30 to 50 minutes. Then, drain and set aside.
  • In a bowl, whisk together soy sauce and cornstarch until smooth. Pour the mixture over chicken in a separate bowl, stirring thoroughly to coat. Let it sit for a moment.
  • Combine 1/4 cup sugar, fish sauce, tamarind juice, and lime juice in a saucepan over medium heat. Simmer for 5 minutes until warm.
  • In a separate skillet, heat 1 tablespoon of oil over medium-high heat. Add the chicken and cook for 5 to 10 minutes until fully cooked and juices run clear. Keep chicken warm on low heat.
  • In a large wok over medium heat, warm the remaining oil. Toss in garlic and eggs, scramble for about 5 minutes. Mix in cooked chicken until well combined. Add drained noodles and stir until warmed through, about 5 to 10 minutes.
  • Combine sauce, 3/4 teaspoon sugar, and salt with noodles in the wok. Add peanuts and chili powder, then remove from heat. Garnish with chives and serve pad thai with bean sprouts on the side.
