Indulge in a savory chicken Parmesan pasta bake packed with all the classic flavors and textures, sure to impress everyone at the table.
Ingredients:
  • 1 (16 ounce) package uncooked rotini pasta
  • 1 pound skinless, boneless chicken breasts, cut into bite-size pieces
  • 2 cups vegetable oil for frying
  • 2 cups flour
  • 4 eggs, beaten
  • 2 cups Italian seasoned bread crumbs
  • 2 tablespoons garlic powder
  • 1 (16 ounce) package shredded mozzarella cheese, divided
  • 0.5 cup grated Parmesan cheese
  • 1.5 (32 ounce) jars marinara sauce
  • 0.5 cup dry red wine (such as Sangiovese)
Instructions:
  • In a large pot, bring salted water to a rolling boil. Add pasta and cook for about 8 minutes until al dente. Drain in a colander in the sink.
  • Preheat the oil in a deep-fryer or large saucepan to 375°F (190°C) and the oven to 350°F (175°C).
  • Prepare breading station by setting up three bowls: one with flour, another with beaten egg, and the last one with bread crumbs mixed with garlic powder. In batches, bread the chicken by first coating it in flour, then dipping it in egg, and finally covering it with the seasoned bread crumbs.
  • Fry the breaded chicken in hot oil until golden brown and cooked through, about 3 to 4 minutes. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Drain the fried chicken on paper towels.
  • In a large bowl, mix together cooked pasta, fried chicken, half of the mozzarella cheese, and 1/2 cup grated Parmesan cheese. Add marinara sauce and stir well. Pour red wine into the empty marinara sauce jar, shake, and pour into the bowl. Combine everything thoroughly. Transfer the mixture to a large casserole dish and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove the foil, top with remaining mozzarella and 1/2 cup Parmesan, then bake until cheese is melted, about 30 minutes.
  • After baking, let the dish rest for 5 minutes to enhance the flavors before enjoying it while still hot.
