Bake your chicken piccata for a mess-free and delicious dish!
Ingredients:
  • cooking spray
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 0.5 cup chicken broth
  • 0.5 cup half-and-half
  • 0.75 cup grated Parmesan cheese, divided
  • 0.25 cup lemon juice
  • 0.25 cup capers, drained
  • 3 (8 ounce) skinless, boneless chicken breast halves
  • 1 medium lemon, sliced
  • 3 tablespoons dry bread crumbs
  • 2 tablespoons chopped fresh parsley, or to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously spray a 9x13-inch casserole dish with cooking spray.
  • In a medium skillet over medium heat, melt butter until sizzling. Add flour and garlic, stirring constantly until fragrant and well combined, about 1 minute. Pour in chicken broth and half-and-half, stirring continuously until the sauce is thick and bubbly, about 5 minutes.
  • After removing the skillet from the heat, mix in 1/2 cup of Parmesan cheese, lemon juice, capers, salt, and pepper, then set it aside.
  • Cut each chicken breast in half lengthwise to create 2 cutlets. Arrange them in a single layer in the dish. Season with salt and pepper, then coat with sauce and garnish with lemon slices.
  • Mix the remaining 1/4 cup of Parmesan cheese with the bread crumbs and evenly sprinkle over the casserole.
  • Roast in the preheated oven until the chicken reaches an internal temperature of 165°F (74°C), about 20-25 minutes. Finish with a sprinkle of fresh parsley before serving hot.
