Irresistible cheesy chicken dish that's a crowd-pleaser.
Ingredients:
  • 36.40 gm olive oil
  • 600g prepared chicken schnitzel
  • 1 medium brown onion, thinly sliced
  • 2 tsp garlic
  • 22.20 gm tomato paste
  • 400g can diced tomatoes
  • 165.00 ml reduced-fat mozzarella cheese
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced) and prepare a baking tray lined with baking paper.
  • In a hot frying pan, cook chicken in batches with 2 tablespoons oil until golden on each side, then transfer to a tray.
  • Pour the rest of the oil into the pan. Sauté onion and garlic until softened, about 3 minutes. Stir in tomato paste and tomato, bring to a boil, then lower the heat and simmer until thickened, around 5 minutes.
  • Layer the chicken with the tomato mixture and cheese. Bake for 10-12 minutes until the chicken is cooked through and the cheese is golden and gooey. Plate the chicken and serve alongside fresh salad leaves.
