Italian-inspired Chicken Pizzaiola with tender chicken, potatoes, bell peppers, and tomatoes. Irresistibly delicious!
Ingredients:
  • 1 tablespoon olive oil
  • 4 skinless, boneless chicken breast halves - pounded thin
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 potatoes, peeled and quartered
  • 2 green bell peppers, cut into strips
  • 2 teaspoons dried oregano
  • 1 teaspoon onion powder
  • 0.25 teaspoon crushed red pepper flakes
  • 1 (14.5 ounce) can diced tomatoes
  • 3 tablespoons tomato paste
  • 1 (14.5 ounce) can chicken broth
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch baking dish with cooking spray.
  • In a large skillet over medium heat, heat oil. Season chicken breasts with salt and pepper on both sides. Cook chicken until golden brown on each side, about 2 to 3 minutes per side. Then transfer chicken to a baking dish and tightly cover with aluminum foil.
  • In a skillet, combine potatoes and bell peppers, then generously season with oregano, onion powder, and red pepper flakes. Sauté until vegetables are tender, approximately 10 to 15 minutes. Stir in tomatoes, tomato paste, and chicken broth and bring to a vigorous boil. Pour this flavorful mixture over the chicken breasts and tightly cover with aluminum foil to lock in all the delicious flavors.
  • Roast the chicken in the preheated oven until it's cooked through and the juices run clear, about 45 minutes. Use an instant-read thermometer to ensure it reaches at least 165 degrees F (74 degrees C).
