Seasoned chicken with a delightful balance of sweet and salty flavors - a year-round favorite.
Ingredients:
  • 5 garlic cloves, crushed
  • 9.00 gm sugar
  • 2.40 gm salt
  • Pinch ground black pepper
  • 1 lkg (no 10) chicken
  • Olive oil, for frying
  • 2 small fresh coconuts
  • 9.00 gm sugar, extra
  • 1.20 gm salt, extra
  • 20.00 gm butter
  • 2 garlic cloves, extra, crushed
Instructions:
  • Mix together the garlic, sugar, salt, and pepper, then generously coat the chicken with the mixture. Refrigerate for 1 hour, allowing the flavors to meld and intensify.
  • In a large saucepan, generously coat the bottom with olive oil until it reaches a 1 cm depth. Heat over medium-high heat and sear the chicken, turning frequently, for 10 minutes or until golden brown on all sides. Remove chicken to a plate, drain the oil from the pan, and return the chicken back to the saucepan.
  • Poke 2 holes in each coconut round with a skewer and pour the juice over the chicken in the saucepan. Boil, then reduce heat and simmer covered for 20-25 minutes until chicken is cooked. Uncover, sprinkle extra sugar and salt over chicken, and simmer, turning occasionally, for 5 more minutes until sauce thickens.
  • Melt butter in a small saucepan over medium heat, then quickly sauté extra garlic for 30 seconds. Drizzle the fragrant mixture over the chicken and coat the chicken evenly. Transfer the chicken to a serving platter and present it directly at the table for a delightful meal.
