Creamy bacon and tomato chicken salad tossed in mayo, lemon, parsley, on a bed of crisp lettuce.
Ingredients:
  • 5 slices bacon
  • 0.75 cup mayonnaise
  • 2 tablespoons minced green onion
  • 1 tablespoon chopped parsley
  • 1 teaspoon lemon juice
  • 1 dash Worcestershire sauce
  • 3 cups diced cooked chicken
  • 1 cup chopped fresh tomato
  • 2 stalks celery, thinly sliced
  • 12 leaves romaine lettuce
  • 1 large avocado, sliced
Instructions:
  • In a large skillet over medium-high heat, cook the bacon, turning occasionally, until it is evenly browned and crispy, for about 10 minutes. Place on paper towels to drain and crumble once cooled.
  • Combine mayonnaise, green onion, parsley, lemon juice, Worcestershire sauce, salt, and black pepper in a bowl and whisk until smooth.
  • Combine chicken, tomato, and celery in a bowl. Mix in crumbled bacon, then generously drizzle with creamy mayonnaise dressing. Toss until everything is evenly coated. Chill in the refrigerator, letting the flavors meld together for a minimum of 30 minutes.
  • Before serving, take out of the refrigerator and gently mix. Enjoy over crisp romaine lettuce leaves and top with slices of creamy avocado.
